Marinade :
3 tbspOlive oil
1 tbspLemon juice
1 Onion chopped
1 Garlic clove chopped
Few crushed peppercorns
1 Pinch thyme
2 Bay leaves
1 tbspChopped parsley
Sauce :
7 ozTomato paste
2 1/2 tspMustard
1/4 cupBrown sugar
1 tspSalt
Pinch chili powder
1 tbspWorcestershire sauce
1 Onionb , grated
2 tspWine vinegar
2 tspLemon juice
2 tbspWater
2 1/2 tspKetsup
1 tbspOrange or pineapple juice
Procedures:
Step one:Combine all ingredients together for marinade.
Step two:Add chopped fresh rosemary for lamb or pork.choose good cuts of meat and do not salt with marinade.
Step three:Add salt prior to cooking.
Step four:For sauce :make sauce about 5 hours prior to use to marry flavors.
Step five:Let all sauce ingredients come to a boil in pot.
Step six:Simmer a few minutes and let cool completely.either use sauce to brush on meat or may serve sauce on the side separtely
